- Baby Potatoes – 200 gms
- Roasted & crushed Coriander seeds – 4 tsp
- Roasted and crushed Dry red Chillies – 1 tsp
- Roasted and crushed cumin seeds – 1 tsp
- Salt to taste
- Pepper – 1/2 tsp (optional)
- Olive Oil – 1 table spoon or more to coat the potatoes + 2 tsp to drizzle
Wash the potatoes very well and drain the water.
Keep a pan of water to boil, once water reaches boiling point add the potatoes and let it boil for 5-8 minutes. Potatoes needs to be par-boiled only.
Drain the potatoes and put it in a mixing bowl (I would directly put it in the baking dish). Inserts small cuts to the potatoes so the spices can ooze in. Add the spices, oil, salt and mix well. Let it marinate till the oven gets heated.
Pre-heat the oven for 10 minutes at 180 degree celsius.
Put in the baking dish with the coated potatoes and let it bake for good 20 minutes (depending on the type of potatoes the timing of cooking will vary, you will have to check the timing accordingly).
Once potatoes are done, remove and drizzle some more oil. Raise the temperature of oven to 220 degrees & place the dish back, and let the potato skin crisp for 5 minutes.
The roasted potatoes are ready to be served.
Can be served with a green salad or some mint yoghurt. These can be good appetizer or a dish itself.
