I had a Christmas dinner at a colleagues place. Thought of making something simple and easy as a starter dish.
- Medium sized mushrooms – 10
- Garlic – 4/5 cloves
- Onions – 2 big one
- Olive oil – 1 tsp
- Grated Parmesan cheese 1 tablespoon
- Cream cheese 2 tablespoon
- Grated Mozzarella cheese 2 tablespoon
- Salt to taste
- Freshly ground pepper – 2 tsp
- Oregano – 1 tsp
- Fresh rosemary – 1 stem
Wash the mushrooms very well and pat them dry. Cut the stem off and keep it aside. You can see there is hollow space from where the stems were cut, this space will be used to stuff.
Chop the garlic, onions and finally mushroom stems finely.
Add oil to the pan and let the oil be hot. Now add all the chopped items in the order of chopping. Saute for 5 to 10 minutes. This time is sufficient for mushrooms to cook. Turn off the heat. Now add the cream cheese and parmesan cheese while the pan is still hot and mix till the cheese gets mixed with the onion and mushrooms. Add salt, pepper, oregano and rosemary to this stuffing and mix once more. Taste and add if you need any more ingredients as per your taste buds.
Pre heat the oven at 200 degree celcius for 10 minutes.
In the meantime take the stuffing and stuff into the mushrooms, stuff as much as possible. Cover the top with mozzarella cheese.
Arrange the mushrooms in a baking dish and place it in the oven and bake for 15-20 minutes till the mushrooms are cooked.
