Avocado sandwich with basil

Breakfast is the most important meal of the day and it is something without which i cannot start my day, even if it is a weekend.

When I did my groceries last week found ripe avocados which I rarely find. Kept it for couple of days figuring out to make a salad for dinner and then procrastinating lead to weekend. Weekend was the day for me to slice the avocado and decided to make a sandwich for breakfast. It was well flavoured, very moist inside  and crispy on outside.

Ingredients

  1. One Ripe Avocado
  2. One Medium sized Onions
  3. Green chilies 1 or 2 ( can be avoided if necessary)
  4. Fresh basil – to be precise 6-7 leaves
  5. Salt as required
  6. Thyme – 1 tsp
  7. Bread – 8 slices
  8. Cheese slices – 4

Method

Cut the avocado from the center and separate the pieces. Scoop out the flesh with help of a spoon. Add it in a bowl and mash well with help of a spoon or hands if you are comfortable using it.

Chop the onions and chilies finely. Add them to mashed avocado. Roughly chop he basil or just pinch out with your hands as I did and add them along with salt, pepper and thyme. The stuffing is ready now



Take a bread slice spread the stuffing on the bread and flatten it. Place one cheese slice on the top and cover it with second bread. Repeat the same with the rest of the bread and stuffing. Place it in a toaster and toast till crisp. Depending on your toaster this would take anywhere between 5 to 10 minutes.

Remove from the toaster and if required add a dollop of butter on top and let it melt before eating. As it was my weekend I splurged in butter as well.
