With the begining of Winter in Dubai, we all make sure to make the maximum of the weather.
We made camping trip to Qasab , the beauty of the Gulf was breath taking. After the long drive we camped at the beach. We set up our tents, played in water for hours, came out exhausted and starved. It was full moon night and the weather was perfect. The whole group was helping each other to get set go for the barbeque.
We had a raw Pahadi guy in the gang who was so excited to set the coal on fire, which is one of the most toughest job. And I was astonished to see his initiative. He was more than happy to take the trouble as it was taking him back to his camping days in India. After 45 minutes of long struggle the coal was set for barbeque.
We had got the marinated chicken from home so there was no work just to set it on the fire. Only the vegetables were cut here before the barbecue.
As many would not be barbecuing I will give the recipe of oven grill chicken thigh, but the picture I have is of the outdoor barbecued chicken
- Chicken thigh – 500 gms
- Curd – 250 ml/gm
- Freshly ground ginger garlic paste – 4-5 tsp
- Coriander powder – 2 tsp
- Turmeric powder – 1 tsp
- Chilli powder – 2 tsp (All spice can be mixed as per the spice requirements for individuals)
- Garam Masala – 1 tsp
- Salt – as per taste
- Chopped coriander leaves
Wash and clean the chicken thoroughly. Place the chicken in a deep bowl. In a small bowl take curd and beat it with spoon till smooth. Add in the ginger garlic paste and all the spices and salt, pour it on the chicken and mix well. Let it marinate for atleast half an hour.
Pre heat the oven at 200 degree Celsius for 10 minutes. Place the marinated chicken with skin down in the oven dish (for easy cleaning, place aluminium foil in dish and then put the chicken) and pour the remaining marinade over. Place the dish in the oven. Let it cook for 10-15 minutes. After that pull the dish out, check how much the chicken is cooked. Now turn the chicken over and place it back in the oven and grill for another 5-10 minutes. At this point if needed increase the temperature so that the chicken can crisp. Remove from oven and garnish with pepper, coriander leaves and lime juice and serve it hot.
You need not add oil as the thigh piece will give out lot of its own oil, but if you still insist oil lovers can put 1 tsp of oil on top before grilling.
