This dish is a absolute quickie. Just put in your choice of veggies with topping of cheese.
We can call it a Pulav or a Stir Fry Rice.
- Rice – 1 cup
- Oil – 1-2 tsp
- Cumin seeds – 1 tsp
- Ginger Sliced – 1 teaspoon
- Onions – 1 small
- Mushroom – 1/2 cup
- Red Cabbage – 1/2 cup
- Chilli powder – 1 tsp
- Cheese – Mozzarella and Parmesan – 1 tablespoon
- Salt to taste
- Freshly ground Pepper – 1 tsp
- Coriander leaves – A handful
Put the rice to boil with little salt. Once cooked drain and keep aside.
While the rice is on boil heat a pan. Add oil, cumin seeds and ginger slices. Add the onion and sauté till the colour changes. Add the cabbage and mushrooms and let it cook for a minute or two. Add chilli powder, salt followed by rice. Add the fresh ground pepper and coriander leaves. Add the cheese and cook on high flame for atleast two to four minutes. Turn off the stove. The rice is ready to serve.
