I got a recipe from one of my friend for baked veggies, thought why not try to make a pasta dish by modifying the recipe a little. I am trying this for the first time, so don’t even know if it will turn out good, but I don’t mind taking this risk. I have made a humungous quantity to take it for my colleagues and god bless me or rather them if it is a disaster.
Writing the recipe down when the dish is still in the oven.
- Pasta (any , I had farfalle in my cupboard, the butterfly shaped ones) – 1/2 a cup
- Vegetables of your choice (preferably the non juicy ones – like peas, potato, cauliflower, carrots etc) – 1 cup
- Soya Nuggets – handful
- Butter – 2 tsp
- Olive oil – 1 tsp
- Garlic – finely chopped – 4 -5 cloves
- Fresh Chillies chopped -2
- Whole wheat flour – 1 tablespoon
- Milk – 3/4th cup
- Pepper – 2 tsp
- Oregano – 1 tsp
- Rosemary – 1 tsp (Use fresh ones if you get)
- Cheese (I mixed grated Cheddar and mozzarella) – 2 tablespoon (I added extra 🙂 )
- Salt as required
- Sun Dried Tomato (optional for garnish purpose)
- Eggs – 2
Way to go
Boil pasta as per the instruction in the packet. Drain and keep aside.
Chop the vegetables and boil them till about 90% cooked with little salt. I used cauliflower, carrots, peas and mushrooms. Drain and keep aside. Boil the soya nuggets and keep aside after squeezing the water.
Take a deep pan and heat it. Put some garlic butter in it and olive oil. Once they heat up add the chopped garlic and let it soften (I like them slightly burnt so I let it brown). Keep the flame on low and add the flour and keep stirring continuously. Make sure it does not burn but cooks evenly.
Once the raw smell is gone add milk slowly and continue to stir to avoid any lump formation. Add the grated cheese and continue to cook on low heat and keep stirring, this might take about ten minutes. Once the cheese is melted and flour is well mixed with milk add the seasonings pepper, oregano, rosemary, salt and the fresh chillies. Taste it and if you require do add other seasoning or more of the existing seasonings. Let it cool for ten minutes.
Take the eggs and beat well and pour it in the white sauce when it is cooled and mix well.
Pre heat the oven at 180 degree celcius. Take a baking dish and coat it with some butter or oil. Arrange the vegetables in the dish and layer with cooked pasta. Add some salt and pepper to the vegetables. Pour the white sauce on to the vegetables. Arrange the chopped sun dried tomatoes on top and remaining vegetable and pasta and pour the rest of the sauce.
Place the baking dish in the oven and bake for an hour or till the top crust browns and crisps.
