I was bored with my every day Indian cooking for lunch. So decided to make non Indian for change of taste and to recreate interest in my kitchen, started off with Noodles, followed by pasta and my now favourite quinoa salad with Salmon, after all that was a good week. But as always I just forget to write as I am always engrossed in how the food turns up and what my friends say when they try it and then blogging becomes secondary. One of my close friend/cousin has been pestering me since last month about my culinary adventures on the blog. So I am back to writing, this one is for you Aju :).
Delightful Veggie Noodles
- Any form of noodles available in the market – 1 packet
- Spring onions – 1 bunch
- Grated Carrots – 1/2 a cup
- Sliced Capsicum – 1/2 a cup
- Red onions thinly sliced – 1
- Garlic (My Favourite of all ingredients) – As per your taste buds , but I add a lot of chopped garlic
- Freshly ground pepper – 1 tsp
- Soya sauce – 1 tsp
Below are the ingredients of my choice for a little twist
- Olives (this is the little twist)
- White vinegar (1-2 tsp)
- Sesame oil 2 tablespoon
- Sweet chilli sauce
- Tiny dry red chillies (as much as you can handle as it is very spicy)
Boil the noodles as per the instruction on the packet. While it is on the boil chop all the ingredients and keep aside. Take a wok or a frying pan and heat it. Add sesame oil and let it heat till the fragrance of the oil is released. Now add the chopped garlic and let it burn a little not blackened. Add the spring onions and cook till done. Follow it by the onions and then the remaining veggies. Add the dry chillies and crush them a little with hand before adding.
In the meantime the noodles must be done, drain and keep aside. When the vegetables are cooked add salt to it (add little extra). Now add the olives and soya sauce and stir for a minute. Add in the cooked noodles followed by vinegar and sweet chilli sauce. Mix them well and keep the gas on high flame. This takes a little effort. Turn off the stove and pepper and mix again. The noodles are ready to be served.
It can be sever with scrambled pepper eggs, but I had it as is.
