The weekends after party and socialising sometimes pass by without any cooking and lazing around. By the end of the day I feel so nauseated that I get in to the kitchen to refresh myself.
So after some looking around I know what to make or rather bake as it is my favourite thing to do.
- Bananas ripe – Had 3 of them used all
- eggs – Again had 3 of them
- Butter – Dint had any, so substituted with 3 tablespoon of oil
- Sugar – 1 or more tablespoon, depending on your sweet tooth
- Whole wheat flour – 4 – 5 tablespoon
- cinnamon powder
- Pinch of salt
- Soda Bi car – 1 tsp
- Baking soda – 1 tsp
- Vanilla essence – 2 tsp
- Milk – 1 tablespoon (i had soya milk, so that went in)
- mixed nuts
Mash bananas and keep them aside. Pre heat the oven at 180-190 degree celsius. Greas a baking dish with little oil or butter and dust with some flour and keep aside.
In a bowl beat the eggs till fluffy, like really fluffy not stiff. Add in the oil and beat some more. Now as you beat throw in the wheat flour slowly and continue beating. Add in the mashed banana and keep beating and slowly add in the sugar, if needed at this stage add more wheat flour. Add in the essence and add in one tablespoon milk, this is optional. Add the salt and cinnamon powder. Mix some nuts of your choices (I used almond, walnuts all chopped roughly)
After the beating is done and the batter is smooth add in the soda bi carb and baking soda. I prefer to add at this stage as I believe they help in keeping my cakes fluffy. Do a final mix with your spoon. Now pour this batter in the pre-greased tin or glass wear and place in the oven. Bake for atleast 45 minutes or till done. Serve it warm to get the best flaovour.
